While I was in Belize, Sally, the woman who owned the yoga studio made breakfast for us each morning. She even catered to my vegan choice. One morning she made me these fabulous vegan pancakes. I've made them at home twice now and the twins just love them! We put peanut butter and honey on. Mmmm! What a treat!
1-1/3 gluten free flour
2 tsp. baking powder
1/4 teaspoon salt
1 cup soy or rice milk
1/3 cup carbonated water
1 T. sugar
1 T. vegetable oil
Preheat griddle. Combine flour, baking powder and salt. Add soy milk, carbonated water, sugar and oil. Combine until well blended.
